Easy Shiitake Mushroom Ramen

This is our favorite ramen recipe!

INGREDIENTS:

2 quarts sliced shiitake mushrooms

8 ounces ramen noodles

5 cloves garlic, minced

5 sliced scallions

6 cups vegetable or mushroom broth

2 cups chopped bok choy

1 1/2 tsp miso paste

1 tsp maple syrup

3 Tbsp soy sauce or tamari

1/2 tsp ginger powder

1/2 tsp red pepper flakes or sriracha to taste

1 Tbsp Olive Oil

1 Tsp Sesame Oil

 

Toppings:

Soft boiled eggs, halved

Toasted sesame seeds

Directions: Sauté sliced shiitake, scallions and garlic in olive and sesame oil until almost cooked through. Add sliced bok choy and continue to sauté for 1-2 minutes. At the same time, in a separate pot, whisk together, broth, miso, spices, and maple syrup and bring to a boil. Add ramen and cook according to the package’s directions. Divide into bowls, spoon shiitake and bok choy into each bowl and serve immediately with toppings of your choice. We recommend a soft boiled egg, halved and toasted sesame seeds.  Delicious!’
